Citric acid = black mold (Aspergillus niger) Most citric acid isn’t made from actual citrus! It’s manufactured through a fermentation process using a mold called Aspergillus niger. The mold ferments corn to produce citric acid, which is widely used in food and drinks because it’s cheap, easy to make, and produces a much higher yield than sourcing it from real citrus.
